I watched the appendices too, but you can learn the names just by looking at the sketches of characters with actor's names before the main credits.

Gondor's capital was Osgiliath before Minas Amon. Arnor's capital was Annuminas and then Fornost.

EDIT: sorry, Minas Anor, not Amon.
