The cloth was various browns, always with a bit of grey mixed with it to give it a dull look. I think Snakebite leather was the most used brown. Just gotta experiment.

Love the armor makes me want to buy some 8) what was the difference in technique between the brown horse in the bottom picture and the greyish one above it?

The highlights on the brown horse were applied though normal brush strokes. The highlighting on the grey horse was stippled on.
