Well, I actually don't think it's ever stated that he died because of his losr hand. I just read the part in the Silmarillion about the Hunting of the Wolf to check, and in fact it says that Carcaroth bit Beren in his chest, and that he was heavily wounded. Then Beren hands the Silmaril to Thingol after Huan killed Carcaroth and Mablung gave the Silmaril back to him, and then he died.

Luthien drew the poison out of the wound from his stump of his hand. Despite the fact that he lost his hand and most likely a good amount of blood, he was ok. During the hunt, he was kinda mauled by Carcharoth, who was then killed by/killed off Huan. Beren then died, causing Luthien to die of grief.
