So, after a fight that resolves that neither side is wounded, can either of the models retreat? or do they have to fight till the death?

The losing model must back away 1" (2cm). Both models may move as normal during the next move phase. You don't need to charge them into eachother again.

I thought that once a model loses a fight, it has to retreat before the wounds are rolled? This is to determine whether the model is trapped, and thus double dice rolls.

Anyyway GW should really make their measurements consistent...
1" (which is actually around 2.5cm) is a lot easier to get units trapped compared to 2cm.

BTW regarding measurements do the tournaments use cm or inch? Or does it come down to players agreements?

I know in the US everything is in inches, but I would imagine that other countries would favor their local standard.
